Rodeo Blue Cheese Lettuce-Wrapped Burgers

with BBQ Beans, Gluten-Free Slaw & Clean BBQ Sauce

Ingredients:

  • 1½ lbs grass-fed ground beef
  • ¼ cup crumbled blue cheese
  • 1 tbsp clean BBQ-style spice rub (paprika, garlic, onion, mustard powder, sea salt, black pepper—no sugar or MSG)
  • 1 white onion, thinly sliced
  • 1 tbsp real butter (for sautéing onions)
  • Large lettuce leaves (Romaine, Butter, or Iceberg)
  • Sliced tomatoes
  • ¼ cup clean mayonnaiseMake Your Own Mayo
  • ½ tsp Plant Derived Minerals (add to mayo or burger mix)
  • Optional: pickles, spicy mustard, avocado


Instructions:

  1. In a bowl, mix ground beef, blue cheese, spice rub, and Plant Derived Minerals.
  2. Form into 6 patties. Grill over medium heat for 5–6 mins per side (target temp: 160°F).
  3. In a skillet, sauté sliced onions in butter with a sprinkle of spice rub until caramelized (6–8 mins).
  4. Build burgers in crisp lettuce leaves with tomato, mayo, grilled onions, and extras.


🥬 Side #1: Gluten-Free Sweet & Tangy SlawIngredients:

  • 3 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 2 tbsp apple cider vinegar
  • 2 tbsp clean mayo
  • 1 tsp raw honey (optional)
  • ½ tsp celery seed
  • Salt & pepper to taste
  • Optional: splash of Plant Derived Minerals


Instructions:

  1. Mix dressing ingredients.
  2. Toss with slaw mix and chill for 20+ mins.


🫘 Side #2: Clean BBQ Beans (Gluten-Free)Ingredients:

  • 2 cups cooked pinto or navy beans
  • ½ cup homemade or clean tomato sauce (no sugar)
  • 2 tbsp homemade gluten-free BBQ sauce (recipe below!)
  • ½ tsp smoked paprika
  • 1 tbsp apple cider vinegar
  • 1 tbsp raw honey or stevia
  • 1 garlic clove, minced


Instructions:

  1. Stir everything together in a pot.
  2. Simmer on low for 10–15 mins, stirring occasionally.


🔥 DIY Clean BBQ Sauce (Gluten-Free & Refined Sugar-Free)Ingredients:

  • ¾ cup tomato paste
  • ½ cup apple cider vinegar
  • ¼ cup water
  • 2 tbsp raw honey or maple syrup
  • 1 tbsp coconut aminos
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp sea salt
  • ¼ tsp mustard powder
  • Optional: dash of cayenne for heat


Directions:

  1. Whisk all ingredients together in a saucepan over medium heat.
  2. Simmer 10 minutes, stirring frequently.
  3. Let cool and store in fridge for up to 2 weeks.
