- 3 Roma tomatoes, seeded and finely diced
- 1 cucumber, peeled, seeded, and finely diced
- ¼ red onion, finely diced
- 1–2 tablespoons fresh basil, chopped
- ¼ cup crumbled feta (optional)
- 1 tablespoon balsamic vinegar (gluten-free certified)
- ½ teaspoon garlic powder
